Every Child Deserves Mickey Pancakes: Our Family’s Story & One of the Reasons Kaleidoscope Travel Advisors Was Created

When we adopted our boys, one of the first things we dreamed about was taking a real family vacation. We wanted to experience laughter, adventure, and the joy of seeing the world through their eyes. Like many families, we imagined a trip filled with Disney magic. But for us, travel has never been as simple as booking a flight and showing up. Our son Carson has PKU, or Phenylketonuria, a rare metabolic disorder that requires a strict low-protein diet. Every bite matters, every ingredient matters, and every trip takes careful planning and coordination.
When I read that Disney “caters to guests with PKU,” I felt a wave of relief and excitement. Finally, there was a place that seemed to understand families like ours. We spent hours researching, calling ahead, and reading every detail on Disney’s website. We found restaurants that specifically mentioned they could accommodate PKU-friendly meals and felt confident that we could finally enjoy a vacation without constant worry.
Unfortunately, that wasn’t how things unfolded. When we arrived at Disneyland, no one really knew what we were talking about. Even the restaurants listed on the official website were unfamiliar with PKU and had no idea what foods were safe for Carson. Thankfully, we tend to overpack, especially when it comes to his food, so we had plenty of his safe meals with us. But it was heartbreaking to watch him sit there while everyone else enjoyed what Disney had promised would be inclusive dining. He wasn’t able to participate, and although we were grateful to have come prepared, we felt deeply disappointed.
We didn’t give up though. The next time we visited, we planned everything meticulously. We spoke directly with chefs, confirmed menus in advance, and reconfirmed before our reservations. We wanted to believe that with extra preparation, this trip would finally be different. But when we arrived, the ball was dropped again. His pizza wasn’t cooked until we were already finishing dessert. At breakfast, the staff didn’t know which pancake mix to use. At lunch, the restaurant had no idea what to prepare. Each meal became a waiting game, and each delay was another reminder that even the most magical place on earth wasn’t equipped to truly support families like ours. It was exhausting, frustrating, and isolating for Carson and for us as parents.
Everything changed when we decided to try a Disney Cruise. From the moment we stepped on board, the experience was completely different. The staff already knew Carson’s name and his dietary needs. They communicated with us daily, confirmed every meal, and treated his food with the same care and attention as everyone else’s. One morning, they brought out Mickey-shaped pancakes just for him, and his entire face lit up. For the first time, he wasn’t waiting for his meal while everyone else ate. He wasn’t eating something different or separate. He was part of the experience. Seeing that joy and inclusion in his eyes was absolutely priceless.
That moment was our turning point. We realized that if we, as experienced travelers and meticulous planners, had this much trouble making a trip work, then there must be so many other families who had simply given up trying. We understood why. Traveling with medical or dietary needs can feel impossible when every meal, every environment, and every experience requires extra effort and preparation. But it shouldn’t be this way.
